First Course: Potage
Lobster Style Bisque
A luxurious ocean inspired bisque of hearts of palm, simmered with fennel & tomato. Delicately finished with brandy, fresh tarragon & silky oats cream for a comforting yet elegant start. Garnished with seaweed gremolata.

A velvety North Indian inspired soup of slow- steeped cashews infused with ginger, white pepper, cardamom, cloves and saffron. Finished with aromatic curry leaf oil and a hint of bright citrus.

Second Course: Insalata
Roasted Beet & Strawberry Carpaccio
Thin sliced beets paired with macerated strawberries, baby arugula & toasted pumpkin seeds. Tossed with a vibrant citrus chili vinaigrette & a touch of sumac. Drizzled with a pomegranate reduction & topped with vegan goat cheese.

A modern take on kosambari with saffron roasted carrots, cucumber, breakfast radish, finely diced medjool dates & split lentils. Accented with citrus, fresh herbs and toasted mustard seeds.

Millet Tart with Leek, Fennel & Avocado
A delicate millet crust filled with slow-sauteed leeks, fennel & potato. Balanced with a velvety avocado & drizzled with tamarind date chutney & chive oil.

Roasted Beet Kabob with Silken Cauliflower & Pomegranate
Roasted beet kebab, boldly seasoned with fresh ginger, mustard, paprika, cumin, coriander, fenugreek leaf, mango and citrus. Topped with gluten free breadcrumbs and served over cauliflower mousse. Glazed with a pomegranate reduction and finished with green oil.

Pillowy potato gnocchi bathed with artichoke & saffron fondue. Accented with garlic confit, mushroom, asparagus, shaved fennel & fragrant chive oil.
