A silky winter veloute made from roasted parsnips, ripe Bartlett pears, thyme, white pepper, and a touch of coconut cream for richness finished with a drizzle of herb oil.

Crispy Butternut Squash Polenta with Cranberry–Orange Balsamic Glaze
Golden seared herb infused polenta cakes made with cornmeal, roasted butternut squash, vegetable broth, garlic and thyme, topped with wilted greens and an orange and cranberry balsamic reduction.
